Stalking A New Recipe: Corn Salad Pleases The Whole Table

We Michiganders love our corn — and flavor and crunch abound in this fresh recipe for corn salad. It’s super easy to make and is a real crowd pleaser.

WHAT YOU NEED:

  • 2, 15-ounce cans of corn, drained (or 30 ounces of fresh corn shaved off the cob)
  • 1 red pepper, diced
  • 1⁄4 cup of chopped green onion
  • 1⁄2 cup of sour cream
  • 1⁄2 cup of mayonnaise
  • 1 1⁄2 cup of cheddar cheese
  • 10-ounce bag chili-cheese corn chips
  • Salt and pepper to taste

WHAT TO DO:

  • Mix ingredients together, except for the corn chips.
  • Right before serving, stir in crushed corn chips to suit your taste. Half the bag will do, but more power to you if you want to use it all.

TIPS AND TRICKS:

  • Squeeze a bit of lemon or lime in for a splash of citrus flavoring.
  • Reserve a few ingredients to garnish your salad and give it added color.
  • You can keep the corn chips out of the mix or get the larger scoops and use the salad as a dip.
